Course Overview

Experience the craft of pig butchery in this practical, hands-on course led by Nick McCarthy of Lúnasa Farm (https://lunasafarm.ie/). Held at the BIA Innovator Campus’ purpose built Butchery Unit.

Under Nick’s guidance, you’ll develop understanding of craft butchery methods and products that can be produced from a whole pig – sausages, ham, etc. This course is ideal for chefs, food producers, and anyone interested in learning more about butchery and meat preparation.
